Ratatouille

Hello,

 

More and more vegetables from the garden. They are splendid and never taste the same one another.

 

Long live the yellow tomato and the orange sweet pepper.

 

Even though we had a poor weather sunwise this Summer, September has brought us a good period for growing.

 

Thus everyday, fresh noodles or gaspacho can be part of our Mediterranean diet, most of these products can be kept in the crisper of our refrigerator for a few weeks: tomatoes, sweet peppers, eggplants, onions.

 

Here is a good recipe and the French call it "Ratatouille" which could mean "bad stew", but this would be a bad translation, so just call it "ratatouille"

 

Preparation of the recipe :

 

Good olive oil (add butter if you wish)

  • 1 big eggplant
  • 1 big white onion
  • 1 medium zucchini
  • 1 clove of garlic

 

Cut all vegetables in dices and brown gently in the mixture of oil and butter.

 

Add 3 or 4 tomatoes of your choice, green beans (if you like).

 

When cooking, you may add a jar of homemade tomato sauce and somevegetable broth. I myself like to add some miso, or salt to your taste.
