Baked potatoes with Leeks and Mushrooms

Ingredients :

 

  • 6 large potatoes, baked
  • 1 tbsp vegetable oil
  • 1 clove garlic, minced
  • 1 tbsp mustard
  • 1 leek, sliced thinly
  • 2 oz mushrooms, sliced thinly
  • 2 tbsp cream

 

Preparation of the recipe :

 

Cut an X in the top of each baked potato, 2" deep, and squeeze gently to open the top. Fry the leeks and garlic in the oil until soft. Add the mushrooms and cook until tender. Stir in the mustard and cream and bring to a boil. Spoon onto the hot baked potatoes.
